Why do we use grease traps?

Im working in a swamp in PNG and trying to build the camp. With the kitchen water wastage, Just wondering if anyone knows a design for grey water in a swamp. The water table is only 4cm below the ground.
I am trying to find a sewage desihn also. The ground is clay and non permiable.
